Cauliflower Chowder.

You guys, please stop me if I'm over-cauliflowering. 

Actually, don't because I don't care.

I had a bunch of stuff in my refrigerator I was worried would go bad, so I kind of shoved it all in the pressure cooker and went on my way.

 
Cauliflower Chowder

1 head of Cauliflower, chopped in big pieces
8 slices of Turkey Bacon (confession, I used the real stuff this time)
2 cups Chicken Broth
1 cup Milk
1/4 - 1/3 cup Flour (this depends on your preference of thickness)
2 tbsp. Mrs. Dash Onion and Herb seasoning
Garlic (your preference!  we <3 garlic around these parts)
Sprouts for garnish

I have a pressure cooker, which I HIGHLY recommend to anyone who is short on time; however, a slow cooker or stove top would work fine.  I made this in less than 20 minutes with the pressure cooker, so it's worth the investment for me.

Cook Bacon as your normally would and set aside on a paper towel.

Throw your Cauliflower, Chicken Broth, Milk, Garlic, and Onion Seasoning into your pot and bring to a boil.  Before adding the Flour, mix in a couple tbsps. of COLD water with the Flour so it doesn't get all clumpy when you add it to the hot pot.  Your sauce will thicken - this is where you can decide to add more Flour to make it even thicker or less Flour next time.

Cover your pot and allow to simmer for 45 minutes.  If you're using a crockpot, just throw all the ingredients in at once and be on your way :P

Get yourself a bowl, top with some crumbled Bacon and Sprouts and ENJOY!
